Under OS X you can use, coming from Linux:
Ardour + plug ins http://ardour.org/
Audacity http://audacity.sourceforge.net/
Jack http://jackaudio.org/
there may be others, but it's the main ones. Ardour is on the way to
be an alternative to Pro Tools, it's endorsed by SSL for a week now :)
Specifically on music using linux, the only (bloody really fucking)
GOOD website I know of is http://www.linuxmao.org but it's in French.
http://ccrma.stanford.edu/planetccrma/software/
is one of the specific distribution, doesn't run on macs.
I don't have time to search more things I know there is about
unfortunately.
